I was wondering that too, but the OED says "angiosperm < modern Latin angīosperm-us (Hermann 1690), < Greek ἀγγεῖον vessel, receptacle + -σπερμ-ος, adj. formative < σπέρμα, σπέρματ-, seed. (Greek has also -σπέρματ-ος; compare πολύ-σπερμος or πολυ-σπέρματ-ος many-seeded; whence angiospermous and -spermatous.)" So it seems there's some ancient precedents for the -spermae ending.
